First picking and pressing

35kg picked before the rain came in.

This is our first year of pressing ourselves with our brand new press, after milling is the malaxing.

After about 50 minutes of malting they go into the press.

Out of the press comes beautiful, fresh olive oil.

The oil is then left to separate overnight before being drawn off to settle.
